I find myself making this treat almost every week because it’s not only delicious but also completely dairy-free, sugar-free, and gluten-free making it a healthier option. Best of all, it’s all prepared in just one bowl, which means less mess and more enjoyment!

Ingredients:

  • 3 ripe bananas
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup (or sweetener of choice)
  • 2 eggs (or flax eggs for a vegan option)
  • 1 cup almond flour (super-fine)
  • 1 cup gluten-free oat flour
  • 1½ teaspoons cinnamon
  • 1 teaspoon baking soda
  • ¼ cup flaxseed meal (ground flaxseeds)
  • ¼ cup unsweetened almond milk
  • ½ cup of chocolate chips (dark or semi-sweet variety)
  • 1 banana, sliced (for topping, optional)
  • Additional chocolate chips (for topping, optional)

Optional Honey Cinnamon Butter

  • 8 tablespoons butter (or vegan butter)
  • ½ teaspoon cinnamon
  • 1 tablespoon honey (or to taste)

Instructions:

Step 1: Prepare the Bananas.
To start, mash three ripe bananas in a mixing bowl until smooth. You can use a fork or a potato masher for this task. Once mashed, add in one teaspoon of vanilla extract and two tablespoons of maple syrup for sweetness.

Step 2: Mix in the Eggs.
Next, incorporate two eggs into the mixture. If you're opting for a vegan version, substitute the eggs with flax eggs by mixing one tablespoon of ground flaxseed with two and a half tablespoons of water and letting it sit until it thickens. Stir the mixture until all ingredients are well incorporated.

Now, add in one cup of almond flour and one cup of gluten-free oat flour to keep the recipe gluten-free. Include one and a half teaspoons of cinnamon, one teaspoon of baking soda, and a fourth cup of flaxseed meal (ground flaxseeds). Thoroughly mix the dry ingredients to achieve an even blend.

Step 5: Preheat the oven and get ready to bake.
Preheat your oven to 350°F (175°C). Grease your baking pan and line it with parchment paper to prevent sticking. If you like, slice one additional banana in half lengthwise and place it on top of the batter, along with a sprinkle of extra chocolate chips for an appealing finish.

Step 6: Bake the Bread.
Place the banana bread in the preheated oven and bake for about 40 minutes, or until a toothpick inserted in the center comes out clean.
